DescriptionStachyose, also known as stachyose, belongs to the class of organic compounds known as oligosaccharides. These are carbohydrates made up of 3 to 10 monosaccharide units linked to each other through glycosidic bonds. Stachyose is possibly soluble (in water) and an extremely weak basic (essentially neutral) compound (based on its pKa). Stachyose exists in all living organisms, ranging from bacteria to humans. Stachyose can be converted into raffinose and D-galactose; which is mediated by the enzyme Alpha-galactosidase a. In cattle, stachyose is involved in the metabolic pathway called the galactose metabolism pathway.
