These are n-acylated alpha amino acids which have the L-configuration of the alpha-carbon atom. N-acetyltryptophan is a moderately basic compound (based on its pKa). N-acetyltryptophan is a potentially toxic compound. N-acetyltryptophan has been used as a protein stabolizer.
